It's ultimately your decision. You have 1 child and there are plenty more that can be adopted. This Lupron thing is for the BIRDS!!!!!
I am also 27 with pretty much the same things as you. I have had six endo surgeries and all kinds of different treatments. I also have poly cystic ovaries and they won't give me a hysterctimy either. I don't have children, but am sick of all of the crap I have been dealing with.
I think you may wish to consider getting a new doctor. I am 31 and had my hysterectomy at 29 with no children. My doctor instructed me to speak to a psychologist to be certain that I knew what I was doing and that the hysterectomy was the correct choice, but he had no problem in operating. However, I had the surgery before I knew that I had endo and kept my ovaries which means that I still have endometriosis with occasional heavy bleeding. The last time it happened, I felt that I knew what a miscarriage felt like since the blood coming out was in large clumps in addition to streams of blood. I had to wear a diaper for several days before I could get a hold of some birth control pills to control the bleeding. A full hysterectomy may help, but there are the dangers of early menopause. Look into it carefully and look into your family history. Did your mother/aunts/grandmothers have osteoporosis? If they had to take hormonal replacements after menopause, your endo may continue after menopause with the hormonal replacements. Be careful with your choice, but if the only problem is your doctor, seek out another.
